Today was well spent, somewhat chaotic and running on little sleep. Yesterday I had a wonderful day with my aunt, exploring the west side of Cleveland and hitting up our favorite spot as always: the Root Café. It was phenomenal like the last few times we’ve gone. I go there too much now and I’m probably going to feel withdrawal from there when I’m at school this year BUT I always have Native Foods to go back to which I absolutely cannot wait to smash my face into. Ugh yum.
Anyways, instead of doing a post on all of the goodness I noshed away on yesterday including this out of this world homemade vegan carrot ginger soup and walnut taco salad, I plan on discussing my Saturday eats. I wish I could pull through with “What I Ate Wednesdays” but for the past week or two my “Wednesday eats” have been kind of boring and not picturesque. However, today my food throughout the day was pretty snazzy and colorful so I thought why not document. Per usual.
I ended up hitting my favorite juice bar on West 29th Street yesterday, Beet Jar JuiceBar & Takeaway. I told the co-owner Molly I had to come in and snag a juice from them before I left for school and thankfully, my favorite was available. God bless. Watermelon beets and lemons make for the most refreshing drink on this planet. I combined this with a super moist strawberry (vegan) scone from the Root Café for breakfast this morning. So much pink and red going on and I loved every second of it.
I haven’t had a scone this good in god only knows how long. It was SO moist and that is the best part of vegan treats to me. I feel like they are so much more moist and fresh than those with dairy. I am probably just talking a bunch of nonsense that does not even make sense but seriously.. this thing was so good and the strawberries were gooey and it was not rock hard (even after being a day old).
I paired half of my juice with my scone AND a big whoppin’ grapefruit and some cherries. I find myself eating through my bag of cherries in the fridge as I make my breakfast/snacks. I’m a cherry addict.
So after having a super early breakfast and then working a fast-paced 5 hour day, I opted for Whole Foods to pick me up for lunch. I always falter to the easy grab and go of Whole Foods. I tell myself I know I have food at home but then I realize that will take another 20-40 minutes to cook and when you’re hungry post-work, nothing sounds better than the hot bar at Whole Foods. Nothing I tell ya! So I opted for some lemon roasted carrots, tiny baby mushrooms and some hunks of breaded tofu covered in some tomato-okra sauce. Then I got a long and thick collard green wrap that was called the “Greek Collard Wrap” for $6 in the glass case. It had cabbage, carrots, olives, LOTS of hummus (yes please!) and a ton of quinoa. Super filling and super super tasty. Glad it was huge because for $6 I better be getting some nutritious and delicious ingredients.
Post Whole Foods and Trader Joe’s shopping and the sad activity of getting gas, I made a super thick and creamy smoothie made of cherries, banana and raspberries. First time blending raspberries with cherries and WOW, new favorite smoothie mix. All of the fruit was frozen so it blended right up like a banana ice cream consistency. I started with just a splash of almond milk but bumped it up to around a cup or so with a ton of ice to make it bigger. Threw in half a scoop of SunWarrior Vanilla Protein Powder, topped with goji berries, handful of Purely Elizabeth granola (what else?!) and a scoop of almond butter. Super rich and sweet, totally curing a snack rut.
As for my dinner, I was really feeling some exotic toast creation. This is what I whipped up: 2 slices of Ezekial bread toasted. One slice had avocado and cannelli beans on it, another had hummus with lentils. I ended up wanting more toppings (like always) so I threw on romaine lettuce, nutritional yeast and tomatoes with a side of butternut squash and broccoli. Tons of protein from the beans and lentils plus all of the veggies and healthy fats. Gotta love creative toast recipes and I love when they just pop out of the woodwork. Overall super delicious dinner and day of food.
