Blueberry Peach Parfait

Fall mornings and the weather is getting colder… I should be gravitating away from the smoothie bowls and towards the hot oats.

Yet what am I doing? Still make cold overnight oats. They’re easy to grab in the morning and when you’re waking up at 7:30am for an 8:30am class, they’re most convenient. Every time I think of a breakfast I always do a smoothie or oatmeal. I just bought eggs this past weekend and I have yet to crack one open. I’m too stuck on the idea of a simple breakfast.

The overnight oats I made today were my favorite thus far. I love layering different fruits, yogurts or nut butters between each portion of oats so with each bite I get a taste of something new. Of course after my first few bites I just end up mixing everything together to get it nice and creamy so it doesn’t matter in the end.

I usually have a banana a day and start my mornings with frozen bananas yet this morning I figured I’d branch out. Be different. Go with some new fruits. Therefore I used blueberries, peaches and raspberries. A pretty good combo if you haven’t tried it.

Overnight oats in a large glass filled with fruit, granola and dairy-free greek style yogurt! Unbeatable.

Ingredients
  • ½ cup gluten-free oats
  • ¼ cup So Delicious Greek Style Yogurt (Plain)
  • ½ cup unsweetened vanilla Almond Milk
  • ¼ cup Purely Elizabeth Original Granola
  • Frozen peaches
  • Frozen blueberries
  • Fresh Raspberries
Instructions
  1. Start by putting ¼ cup of your oats into a glass, followed by ¼ cup milk.
  2. On top, layer your choice of fruit. I did 2-3 frozen peach slices followed by blueberries.
  3. Next, put your greek yogurt on top, followed by granola.
  4. Repeat the layer and end with some berries on top!
  5. Place in fridge and let sit 5 hours minimum - I do overnight for best results.

 My glass was filled to the brim once I finished putting on the last blueberries but in the morning once I packed it down a bit more, I was able to fit more peaches on top.

I was extremely impressed with how the cold almond milk turned the oats into such a creamy consistency and the dairy-free yogurt made it so much better. The first few times I tried a greek style dairy-free yogurt I must say I was not a fan. I occasionally would buy ones that had a funky texture/looked like they had gone bad. However, within the last month I’ve purchased them I’ve been quite pleased. I buy these rarely for the expensive price and sugar content but when I do, I always go with the plain flavored ones (the least sugar and additives). No need to buy flavored yogurts when you can easily flavor them yourself — and with REAL fruit!

So-Delicious’ yogurts are non-GMO, certified organic AND vegan. The plain flavored Greek Style one I purchase only has 7g of sugar in a 6oz. container and using half for my oat parfait always goes a long way!

I used to make overnight oat parfaits my senior year of high school with peanut butter, greek yogurt and oats. Honestly they taste similar to a dessert. Although mine didn’t have nut butter in it this time (shocking because I practically live off of nut butters), the granola + milk + yogurt were good as is.
