Gina’s What I Ate Sunday

Hi little chickpeas! We’ve got a new and exciting week ahead and I’m here to say, after the responses on my last post I am feeling so beyond overwhelmed with positivity and overall gratitude. For today’s post, I’m bringing you something short, fun and exciting… with one of my favorite people EVER. Naturally.

Many of you I’m sure have seen bloggers in the health field do “What I Ate Wednesdays” to give people a glimpse into what they eat in a day. I can certainly tell you, my meals change from day to day but you can always find me eating primarily paleo with tons of coffee and kombucha. While I’m usually posting my meals on Instagram or Snapchat stories instead of Instagram 24-7 these days, I think it would be fun to show you guys behind what my roommate eats in a day instead.

Because well… why not!? Something new, something fun.

For those who don’t know, this is my roommate, Gina. She’s been my roommate for almost two years now and I can’t imagine living without her.

We met the first weekend of freshman year and have been attached at the hip ever since. She’s seen me at my worst and been with me at my best. We do it all.

Over the past few months, I’ve been showing her off on my Instagram/Snapchat/any social media truly, because she is one of the only people I have remained close with at my school and who isn’t a friend from the “blogosphere”. Seriously you guys might be surprised at how 90% of my friends are bloggers.

She will taste test products that get sent to our apartment and always bring a little fun and joy into my life. And a ton of guaranteed laughs.

A few months ago we did an Instagram live and some of you said you’d be interested in seeing Gina do a What I Ate Wednesday but instead, we flipped it and reversed it into a What I Ate Sunday. So, here we go. I hope you guys enjoy!

Hey guys, it’s me, Gina – the notorious roommate. I personally feel like every day I eat very different. Breakfast is my favorite meal of the day. Most of the time, I have an egg and some sort of bread or I have a protein shake with a banana and Vega Chocolate Protein. Sometimes it’s an egg in the hole or an english muffin. But I’m going to be real with you, it’s one of those no matter what.

Honestly guys, if you haven’t tried Thomas’ English Muffins you’re missing out. Hashtag Nooks and Crannies!

This morning, I opted for an over-easy egg on top of an english muffin that was spread with butter and a few slices of an avocado. I also had half a carton of blackberries. 

After a fun spin class with Addie, May (@nutritionhappens) and Eleni (our old roommate), we were given little bowls of Aloha Poke Co and juice from Harvest Juicery. I enjoyed half of my bowl while waiting for Addie to talk to all of her fans. I drank half my juice and then got kind of bored with it just because it had too much celery for me, to be honest. 

For dinner, I made pesto pasta and salmon. The pesto sauce is from Whole Foods and I dilute it with a bit of olive oil, then add some chopped tomatoes. After I put the pesto and tomatoes with the pasta, I topped it off with freshly grated parmesan cheese.

The salmon was seasoned with Old Bay and cooked for 15 minutes at 400 degrees.

Hashtag BEAST MODE.

For dessert, I had a Magnum Almond ice cream bar. It was good. Nothing much to report.

Not my favorite ice cream which is Homemade Brand’s Mint Chocolate Chip. Unfortunately, the Mariano’s on Sheridan has refused to fix it’s broken freezers. Resulting in hundreds of freezer burned cartons of ice cream. (Let me enforce that freezer burn does SEVERELY affect the flavor of ice cream and I am deeply saddened by Mariano’s on Sheridan in Chicago).

Last but not least… a night cap. A tall glass of non-alcoholic Sir Banana’s chocolate banana milk. At first I was a little skeptical but I’ve come to love it and I’ve almost finished half the gallon in the past 24 hours. 

Little did you all know, not everything I consumed was reported here. I would have to sneak a sip from the carton every once in a while! 🙂

So that’s what we’ve got for a day of eats in the life of my roommate, Gina. I literally typed her words out verbatim as she talked about her day of eats with me, so it’s straight from the source herself.

I had a lot of fun doing this because Gina is always so silly but still keeps things on the serious side. Especially when we go to the grocery store at 8pm on Saturday nights (like we did last night) and she buys Lays Chicken and Waffle potato chips just because.

That’s what I love about Gina. She eats healthy but she also likes to indulge and eat random, out-there foods that yes, they may be processed and might not be the most healthy but that’s real, and that’s life.

Since day 1 she has always supported my blog, the random food I eat and my healthy way of life. She’s the best. Maybe this will inspire me to do my own What I Ate Wednesday… or Sunday. We’ll see. But until then, I hope you enjoyed G’s rendition.
