You guys, summer is officially in full swing and I couldn’t be happier. Besides the fact it’s 85º out every day and viciously humid… it’s a great excuse to wear t-shirt dresses, drink smoothies and have copious amounts of iced lattes. What could be better?
Speaking of iced lattes, if you follow me on social media you’ll know I’ve been a huge fan of oatmilk (and oatmilk lattes at that) since 2017 when it came onto the coffee shop scene. I love that (if you can find the right oatmilk – like Planet Oat) it’s so flavorful because the base is oats, it gives your coffee a naturally sweet and oh-so-creamy texture. Now I feel as though no matter where you go or look, oatmilk is at a coffee shop, being the base of frozen desserts and a great alternative when dairy isn’t in the cards for you.
Since the 4th of July is this week and tons of parties and events will be happening, there’s no better snack to have on hand than a frozen dessert. I decided to combine two of my favorite things: lattes and smoothies and make them into popsicles using Planet Oat’s full-bodied, creamy textured oat milk. The brands line of oatmilk is fully dairy-free, gluten-free, soy-free, lactose-free, peanut and tree-nut free and comes in FOUR flavors: Original, Vanilla, Extra Creamy and Dark Chocolate.
All of Planet Oat Oatmilk is Non-GMO Project Verified and free of artificial colors, additives, preservatives or flavors. It’s truly just tasty whole grain oats, packed with all the good stuff like vitamin A, vitamin D and calcium.
So in my effort to make something tasty for the upcoming holiday, I picked an oatmilk latte popsicle to start and then made a few chocolate berry smoothie popsicles in addition for those that might want something caffeine-free.
Truthfully I had never made popsicles up until this point and I don’t know why I hadn’t made them sooner because they’re so much freaking fun to make and a good summer activity to do with friends or your kids. A bit of a messy situation while they slowly melt but regardless tasty and we all know that’s the most important part.
To get started, I start with Planet Oat’s Extra Creamy Oatmilk as the base of these pops. I made the oatmilk latte popsicles before the chocolate berry ones and you’ll definitely have a bit leftover if you’re using 4-pop popsicle molds like I did. The recipe tastes delicious on its own (before frozen) so feel free to have some to sip on while you wait for the popsicles to freeze!
- For the oatmilk latte popsicles:
- -1 cup Planet Oat Extra Creamy Oatmilk
- -1 packet instant-espresso powder or ½ cup cold brew
- -1-2 frozen bananas
- -1 scoop collagen
- -2 tbsp extra creamy peanut butter
- -1 tbsp cacao nibs
- Chocolate Berry popsicles:
- -1 cup Planet Oat Extra Creamy Oatmilk
- -1 cup arugula
- -½ cup frozen beets
- -1 cup frozen mixed berries
- -2 tbsp cacao powder
- -1 scoop collagen
- -1 tbsp peanut butter
- Blend each individual smoothie until well combined and creamy, pour into popsicle molds
- Place in freezer for a minimum of 2 hours.
- When ready to eat, let sit for 10 minutes and then enjoy!
