If you didn’t grow up as a kid liking rocky road ice cream were you even human? Probably not. Marshmallows, nuts, chocolate ice cream… sounds like a dream come true if you ask me. I’ve never been a huge marshmallow fan, aside from the occasional s’more every other day in the summer, but this dessert just had to happen.
This past summer I received an awesome package from Chicago Vegan Foods filled with Vegan ‘Teese’ Cheese and Dandies Marshmallows (Both are 100% vegan and dairy-free). I never had a chance to make vegan s’mores with the Dandies due to never getting around to buying graham crackers BUT I did end up bringing the Dandies to school with me because I figured I’d be eating them sooner or later. This past Friday I threw this recipe together. Kind of rolled with it as I went.
I originally was just going to make a banana ice cream… then I thought of Oh She Glows’ Creamy Chocolate Hemp Smoothie which I made this summer and is by far the best dessert smoothie on this planet. From that recipe, I was inspired to do a banana, cocoa and date smoothie but once I started making my “ice cream” super thick and my cravings kicked in… I realized it would be so much better with some toppings and BINGO! Marshmallows and dairy-free chocolate chips came to mind. (I used Chatfield’s brand of non-dairy chips and they taste just like Hershey’s. My friends back home ate them all the time this summer and couldn’t taste a difference).
- 1.5 frozen bananas
- ½ frozen pear
- 2 tbsp unsweetened cacao powder
- 1 date
- ¼ cup almond milk
- 1-2 tbsp Dandies vegan marshmallows
- 2 tbsp dairy-free dark chocolate chips
- Ice for consistency
- Blend ingredients together aside from marshmallows and chocolate chips.
- Make sure your bananas are well frozen and if your mixture is not thick enough, add as much ice as necessary.
- Pour into ramekin or small ice cream bowl, top with mallows and chips! Eat away!
I love adding frozen pear to things almost as much as I love frozen bananas. They add such a great sweetness to the mixture that is out of this world heavenly. To tell you the truth, after I ate this I almost found it a bit TOO sweet. Granted, I am not a marshmallow person and they are primarily sugar and the bananas are sweet to begin with BUT if you are someone who loves sugar and treats, this is for you! And without the toppings, it would be just right.
Instead of having Edy’s Rocky Road ice cream filled with corn syrup and modified corn starch, try to whip up this option next time you’re craving something sweet!
