Happy Thursday food enthusiasts! I am bringing you a post that I dropped on your Instagram feed earlier this week. I’m sure it will be of no surprise to the internet community that it is one of my top favorite items to make: a smoothie. I made this smoothie this past weekend and fell in love with the light and fresh taste it delivered from the combination of Bai5’s molokai coconut beverage and my homemade cashew milk. This was one of the first smoothies I’ve had in quite a while where I did not use a single banana and still managed to make it super creamy and indulgent. Who would have thought? You can easily make delicious smoothies without frozen nanners people!
If you haven’t seen Bai5 in your local Walgreens or convenience/grocery store, you need to get your butt to the drink aisle and find it! Once I get started with a smoothie recipe, I often can’t stop. When I first started making smoothies in high school, I used berries, flaxseeds, water and whey protein powder. I slowly upgraded to throwing in peanut butter and now I throw in my whole refrigerator and cupboards pretty much. It goes a little something like this: almond milk, vegan protein powder, hemp seeds, chia seeds, avocado. 5 different fruits. Maybe four spoonfuls of nut butter? A handful of ice to get it extra thick and spoonable? Sounds pretty accurate.
Once you make this smoothie you probably won’t need anything else in your life. It will wake you up after any workout and hold you over as a mid-day snack. I had it for breakfast poured over a glass of chia pudding (chia seeds soaked in cashew milk) and once I spooned everything all together, I was dreading the point of my meal where the mason jar is empty.
- 1 cup frozen strawberries
- 2 frozen peach slices
- ¼ cup cashew milk
- ½ cup Bai5 Molokai Coconut
- 1 tbsp Essentially Coconut cashew coconut butter
- ½ scoop of Vega protein & greens - tropical flavor
- Ice
- Combine all ingredients in a high power blender.
- Add extra ice as needed and blend, blend, blend!
- Pour into a mason jar, top with added strawberries for decoration and drink up 🙂
The chia seed pudding at the bottom is completely optional, as is the use of cashew milk. You can easily swap out your favorite nut milk and it will taste just as delicious! However, I have been making my own cashew milk lately and because of this, it makes my smoothies much richer and creamier (something I’m a big fan of obviously). Try to stick to the recipe as best you can! So Delicious sells a great cashew milk at Whole Foods if you need one 🙂
I also am addicted to Vega protein + greens lately! I went through my tub of their nutritional shake chocolate protein in a good month so now I’m onto their new on-the-go protein + greens tropical flavor. It’s nice because I usually always want chocolate or mocha protein when I use banana in my smoothies but when there is no banana, I have no urge for the chocolate flavors. That’s when the tropical flavor comes in handy and I can finally branch out! Sometimes ya need a switch up.
In one scoop of the product there is 20g of plant-based protein along with 2 servings of greens. I use half a serving at a time so my tub will last longer and won’t make the smoothie TOO protein filled. Sometimes too much protein is not my thing. Just a little goes a long way and enhances the flavors of the cashew milk and coconut from the Bai! Love loooove it.
I sliced a few bananas on top for decoration but none were used in the actual smoothie itself!

I’ve never ever been a fan of tropical anything, until that darn delicious Vega Protein & Greens tropical. And Bai5 Coconut!! Dreamy to the max. I wished I would have saved my sample coconut flavor for a smoothie, but I was far too excited and drank it straight up! Still waiting to see it more in Canada, but headed to LA this week… Perhaps I should bring my Vitamix with me and whip this little dreamy smoothie up in my hotel room? What do you think?
