The other day my roommate was making a burger and by the time she plated it, all I wanted right there and then was some kind of burger. Kind of like when you’re watching the Food Network and Giada is making some crazy pasta dish and all you think is “wow, I could go for some pasta right now.” I won’t lie to you, I also wanted to get out my phone and take a picture of it. The foodie in me always wants to grab a shot of anything remotely delicious, let’s be real. Yet of course there are those times when the hungry side gets the best of me and I just want to enjoy my completely ugly and unphotogenic meal. Sometimes you just gotta live your life without taking a photo of it.
Keyword here… sometimes.
Today was definitely one of those times I thought I would be having an ugly lunch. As I was on my way home from work, I naturally had to stop into Whole Foods to grab something to eat. I didn’t really care if whatever I was about to buy looked good or not. By the time I rolled up to the salad bar, I noticed grilled pineapple. Then I thought to myself how I needed to restock on my favorite thai coconut curry hummus from Hope Foods because obviously, pineapple and coconut go together like myself and tacos. One thing led to another and before you know it, both of those items were in my cart.
I know what you’re thinking already… “Pineapples with hummus? Then on top of a turkey burger? Addie, why do you eat hummus with everything? That doesn’t even sound good.” Well, let me tell ya, this thai coconut curry hummus is more of a sauce or dip to me than hummus. Quite honestly I can barely taste any garbanzo bean texture BUT then again, I do live off of this stuff so who knows. But anyhoo, I ended up purchasing just four ingredients for this tropical delight and I still have leftovers. I already want to have this for dinner… it was that good.
Like any good burger, I needed buns. This was my first time purchasing sprouted burger buns and I was a bit hesitant at first that they would be A. too tiny and B. break too easily (like sprouted tortillas tend to do). Luckily, neither of which were the case and it was the perfect sized little nugget of sprouted grains. They look very similar to english muffins but I’m not mad at it – just another vehicle to eat my nut butter and bananas off of in the mornings. Mmm mm.
Now everyone knows no good burger is complete without lettuce or tomato but since I was using a thick slice of pineapple, I swapped out the tomato. If you follow me on Instagram, you’ll know I purchased an organic produce box from Door to Door Organics on Monday. Out of the several items I received (eggplant, plums, kiwi and zucchini.. yum), a small head of organic romaine was included. I threw two huge sprigs on one side of the bun for a little pillow to hold my turkey burger.
If you like to eat local, fresh and organic food, especially from your local farmers markets, I strongly recommend trying out Door to Door Organics. Not only do they deliver organic, non-GMO produce boxes to your front door weekly or bi-weekly but you can also buy items you’d find at the store to include in your box such as bread, dairy and pantry staples. I received the small box for $39.99 (but trust me, it was huge and well worth the money).
Along with my burger, I roasted some yellow potatoes that were included in my box. What’s a burger without some fries? I know sweet potato fries are usually the move these days but it’s always good to mix it up a bit and go for the old time classics. Besides, I’m turning WAY too orange from all of the beta-carotene I’ve been intaking from those darn sweet taters. (Yes, that’s a real thing and it is my life struggle).
- 1 dozen roasted small yellow potatoes
- 2 tbsp olive oil
- 1 half pound turkey burger
- 2 small romaine lettuce leaves
- 1 sprouted grain bun
- ¼ cup Hope Foods thai coconut curry hummus
- 1-2 pineapple slices or chunks (grilled, preferably)
- Salt and pepper for seasoning
- Begin by preheating your oven to 400º to roast your potatoes. Once heated, slice your small potatoes into halves, drizzle in 1 tbsp olive oil, salt and pepper and cook on a baking sheet for 30 minutes.
- Once potatoes are done, turn oven down to 350º to heat up your bun.
- While oven is preheating, put a tablespoon of olive oil in a sauté pan and set to medium-high heat.
- Place your turkey burger on the sauté pan once hot, start by cooking on each side for 4-5 minutes.
- While burger is cooking, place your bun on a baking sheet for 5 minutes to toast.
- Place a dollop of hummus on each side of the bun.
- Put your lettuce on one half, the pineapple on the other.
- Once the burger is done, cut in half so you have a 4oz. portion on your bun and save the other half for leftovers.
- Enjoy with your roasted potatoes and a side of ketchup or mustard, if you wish! 🙂
This recipe creates two portions of a turkey burger, along with two or three servings of cubed and roasted potatoes. If you wish to make the burger for leftovers, I would purchase extra pineapple and even more hummus because you’ll want to dip it and drench it on everrrrrything.
If only the turkey burgers at restaurants were as simple as this homemade version, I’d be eating out pretty much every other night. My favorite thing about burgers is how photogenic from the wide arrange of toppings they can have. So many burger places these days are coming out with CRAZY options from blueberry sauce and blue cheese to mango salsa and black beans… I’m just whipping things up off the top of my head but seriously people, the options are endless!
What I like most about this “ultimate” turkey burger is that although I included four ingredients in between the bun, it was not as high as the Empire State Building like some burgers are. Those burgers that are impossible to wrap your whole mouth around so you end up cutting it in bits and pieces, followed by eating the bun with a fork. Yeah, not a fan.
Best part about this burger? I wasn’t left in a food coma and now I’m all ready for a killer Bar Method workout on this breezy day. Can you believe it was 90º less than a week ago and now it’s in the 60s and people are wearing jackets and scarves?
Maybe you should take that as a sign to just stay inside tonight like me and cook up some of these bad boy burgers. Sounds like a good Thursday night in my book!

I am the exact same way with hummus. I literally eat it on everything. The other day, we ran out of carrots and so I resorted to eating strawberries with hummus. It wasn’t as bad as it sounds haha ☺

Haha yes! That’s what I like to hear. If people are making chickpea cookie dough these days, I think it’s safe to say strawberries and hummus is a go-to 🙂 Hope Foods sells a dark chocolate hummus! Mmmm, must try that asap.
